• Green peppercorns are black peppercorns harvested well before they're ripe.
• Used frequently in Thai and Creole dishes.

Excellent on fish, vegetables, in sauces (they are frequently used in steak sauces), and on milder meats. Green peppercorns are fresh tasting and less pungent than their black counterparts.
